Amazing Banana-Nut Bread

Ingredients

  • 1 1/2 cups(5 ounces) walnuts
  • 2 1/4 cups all-purpose flour
  • 1 tsp. kosher salt
  • 1/2 tsp. ground cinnamon
  • 3/4 cup veg. oil
  • 2 1/4 cups sugar
  • 3 eggs, lightly beaten
  • 1 1/2 tsp. vanilla extract
  • 1 1/2 tsp. baking powder
  • 1/2 cup soymilk or buttermilk-I use soy
  • 2 cups very ripe mashed bananas (about 5 small bananas)

Directions
Preheat oven to 350 degrees. Put the walnuts on the baking sheet and roast for 12-15 min. After 6-8 minutes, rotate pan to make sure there is even browning. Let it cool and chop or break into pieces. Stir flour, salt and cinnamon in a medium bowl and set aside. Combine oil and sugar and beat on low speed. Add eggs and vanilla and beat for about 1 min. Stir baking powder into the milk in a small bowl. Add 1/3 of dry ingredients to mixer and add half of the milk mixture together. Mix on low speed (10-15 sec.) and repeat. Add bananas and walnuts and do not over mix. Bake for about one hour.
