Hi Amazing Kids! Happy April. I am bringing one of my favorite recipes, Avocado Tomato Salad, to you. Hope you enjoy the recipe and the video! Until next month….

Avocado Tomato Salad

(serves 4)


  • 2 avocados (cut in half/seeds removed/keep skin on)
  • 1 cucumber (medium/peeled/medium dice)
  • 1 large tomato (or 2 medium/medium dice)
  • Salt and pepper to taste
  • 1/4 C Italian salad dressing
  • 2 T fresh parsley


Prepare ingredients as directed. In medium bowl, place the 4 avocado halves. Distribute the tomatoes and cucumbers on top of the avocados. Add salt and pepper to taste. Drizzle with your favorite salad dressing and garnish with parsley. Serve salad with spoons so you can scoop the avocado!!!
