Cook Time with Remmi – April 2018

Hi, Amazing Kids! I encourage you to try this delicious and healthy snack: Edamame Corn Salad. Did you know that edamame is considered the wonder vegetable because it’s the only vegetable that has all nine essential amino acids? I love the combination of this vegetable with the citrus, and the corn adds a really great natural sweetness as well. In addition to strong flavor, this dish is colorful, which is important because we like to eat with our eyes. I hope you enjoy making and eating my salad. Enjoy!

Edamame Corn Salad

Ingredients:

  • Corn
  • Edamame
  • Celery
  • Cherry Tomatoes
  • Onion
  • Red Bell Pepper
  • Avocado
  • Parsley
  • Romaine Lettuce
  • Canola Oil
  • Lime Juice
  • Salt
  • Pepper

Directions:

  1. Place edamame and corn in a bowl.
  2. Add onion, red bell pepper, cherry tomatoes, avocado, and celery.
  3. Season with salt and pepper.
  4. Stir dry ingredients.
  5. Pour lime juice and oil on top of vegetables. Mix.
  6. Put lettuce on plate.
  7. Spoon vegetable mixture on salad.
  8. Top with parsley.
