Hi Amazing Kids! During this holiday season you will find sweet potatoes being readily available and in high demand. Because of this, I have a dish that will go well with every meal or even as a snack! Not only do they taste good, but they’re really good for you too. Enjoy!

Sweet Potato Fries with Lemony Yogurt Dipping Sauce
Ingredients:
- Olive Oil
- Yogurt
- Cooking Spray
- Garlic
- Lemon Juice
- Parsley
- Sweet Potato
- Chives
- Salt and Pepper
Pull out a baking sheet.
Directions:
- Preheat an oven to 425 degrees.
- Coat your baking sheet lightly with the cooking spray to prevent sticking.
- Peel the sweet potatoes. Cut them in half. Cut each half into 6 wedges. Put in cold water.
- Place sweet potatoes evenly on baking sheet.
- Brush some olive oil on the sweet potatoes. This will get them a little crispier. Turn the sweet potatoes to get an even coat of oil on each side.
- Sprinkle with salt and pepper.
- While using oven mitts, put the baking sheet with the sweet potatoes in the oven for 30 minutes in the top ¼ of the oven.
- For the Lemony Dipping Sauce, mix in a mixing bowl the yogurt, lemon juice, garlic, parsley, and chives. Sprinkle with a little salt and pepper. Blend.
- Display the sweet potatoes nicely on a plate with the yogurt dip on the side. Sprinkle with parsley and serve.
