Cook Time with Remmi – February 2014

HI AMAZING KIDS! I am always sad when the holidays are over, but you know February is pretty cool. Valentine’s Day and then you have “Spring Break” coming up next month! I guess most of you know by now that strawberries are my all-time favorite food and I eat them everyday! February 27th is National Strawberry Day – no wonder February is awesome! February 28th is National Chili Day and then we have Dog Biscuit Appreciation Day on February 23rd! Yes, let’s take care of our doggies! But what really makes February the best month is that my birthday is February 25th! Now, let’s get cooking!

 

Remmi’s February Menu

Valentine Salad

White Chili

Chocolate-Dipped Strawberries

Valentine Salad

Ingredients:

  • 3 Cups spinach
  • 2 Cups romaine (sliced)
  • 2 Cups strawberries (sliced)
  • 1 Avocado (sliced)
  • ¼ Cup onion (sliced thin)

Dressing:

  • 4 T light oil
  • 2 T white wine vinegar
  • 1 T honey
  • Salt and pepper

Directions:

Layer salad in order listed. Combine dressing ingredients and drizzle on salad when ready to serve.

 

White Chili

Ingredients:

  • 2 T olive oil
  • 1 Cup each of carrots/celery/onion (medium dice)
  • 2 ½ C chicken (cooked/cubed)
  • 1 14 OZ can of tomatoes (undrained)
  • 1 Can Rotel (undrained)
  • 2 Cans white beans (rinsed and drained)
  • 2 C chicken broth
  • 1 t chili powder
  • 1 t cumin
  • Salt and Pepper

Garnishes:

  • Yogurt (nonfat)
  • Fresh cilantro
  • Lime wedges

Directions:

Sauté carrots/celery/onion for 2 minutes in the olive oil. Add all remaining ingredients except for the garnishes. Bring to boil and then turn down to low and simmer for 30 minutes. Serve with garnishes and toasted bread.

 

Chocolate-Dipped Strawberries

Ingredients:

  • 20 Large strawberries with stems
  • 10 OZ chocolate(milk or dark)

Directions:

Wash strawberries and pat them dry (very important). Place the chocolate in a medium bowl and melt in the microwave until it is not quite melted. Remove from the microwave and stir until smooth. Hold the berry with the stem and dip into the chocolate. Allow chocolate to drip before placing on parchment paper. Put dipped strawberries into the refrigerator for 30 minutes.
