Cook Time with Remmi – February 2015

Hi Amazing Kids! What better way to celebrate Valentine’s Day than to make an Apple Carrot Saute for someone you love! Watch this video of Remmi as she walks us through the steps to be a Top Chef!

In addition, Remmi has a lemon and grapefruit salad with pine nuts. Remmi loves this salad because it has tang, crunch and sweetness when the ingredients are mixed together.

Cook Time

25 minutes

Ingredients

  • grapefruit(pink)
  • 1 bunch Belgium endive
  • 7 oz mixed baby lettuces
  • 3 oz goat cheese
  • 2 T white wine vinegar
  • 2 T extra virgin olive oil
  • 2 T pine nuts(toasted)
  • 2 green onions(thinly sliced)
  • 1 bunch fresh parsley
  • 1/4 C canola oil
  • 1/2 C lime juice

Instructions

Roast the pine nuts in the oven on a cookie sheet until they are golden brown. Wash and tear the lettuce and endive into 2 inch pieces and place in a large salad bowl. Add the green onions, Crumble the goat cheese over the lettuce. Top with the pine nuts. Combine the lime juice, canola oil and white wine vinegar and mix thoroughly. Add salt and pepper to taste and pour over the lettuce and endive mixture and mix thoroughly with the dressing. Garnish with fresh parsley and the pink grapefruit sections.
