Green Bean and Potato Curry


  • Oil
  • Chicken Broth
  • Cumin
  • Curry
  • Green Beans
  • Rice
  • Celery
  • Tomatoes
  • Onion
  • Potatoes
  • Parsley
  • Water
  • Salt
  • Pepper


  1. Prepare rice according to the package. Once finished, set the dish aside to prepare curry mixture.
  2. To prepare curry mixture, pour olive oil into a pan to get ready to sauté.
  3. Add onions and celery.
  4. Let sauté for 2 minutes.
  5. Add potato, chicken broth, water, curry, cumin, salt, and pepper.
  6. Bring mixture to a boil.
  7. Reduce the heat to a simmer, and leave it there for 20 minutes.
  8. Add green beans. Stir.
  9. Let simmer for 10 minutes until beans are tender.
  10. Once the curry mixture is prepared, return to the rice. Pack rice into a bowl that will serve as a mold and preserve shape.
  11. Turn bowl upside-down to place the rice on a plate.
  12. Place curry mixture on the side.
  13. Garnish with tomatoes and parsley.
