Cook Time with Remmi – July/August 2016

Hi Amazing Kids! I am excited to share with you one of my favorite dishes to enjoy during the summer months: Green Salad with Cantaloupe. I love cantaloupe because it not only tastes good but is also good for you; rich in vitamins A and C, this fruit offers incredible health benefits. My salad mixes the crunch of cucumber with the citrus taste of lime juice: The flavors combined are like fireworks in your mouth!

Green Salad with Cantaloupe

Ingredients:

  • Romaine Lettuce
  • Cantaloupe
  • Cucumber
  • Onion
  • Mint
  • Lime Juice
  • Honey
  • Oil
  • Salt
  • Pepper

Directions:

  1. Combine cantaloupe, cucumber, onions, pepper, and salt in a mixing bowl.
  2. For the dressing, pour lime juice, oil, and honey in a separate bowl.
  3. Mix the dressing.
  4. Pour this glaze over the mixing bowl with cantaloupe, cucumber, onions, pepper, and salt.
  5. Mix glaze in.
  6. Place romaine lettuce on a platter.
  7. Place the other ingredients on the lettuce.
  8. Top with fresh mint.
