Hi, Amazing Kids! I am excited to share one of my favorite snack recipes: Coconut Granola with Cranberries. This golden granola combines crunchy texture with sweet flavor to create a delicious summertime treat. I love the dish because it tastes great on its own or on top of yogurt or cereal—the options are endless! As the school year winds down, this snack would be perfect to enjoy with friends on a picnic or to serve at a family get-together. I wish you all a fantastic summer! Enjoy!

Coconut Granola with Cranberries

Ingredients:

  • Coconut
  • Dried Cranberries
  • Almonds
  • Sunflower Seeds
  • Pumpkin Seeds
  • Maple Syrup
  • Canola Oil
  • Water
  • Oats
  • Salt
  • Pepper

Directions:

  1. Mix oats, coconut, pumpkin seeds, sunflower seeds, almonds, salt, and pepper in a bowl.
  2. In a separate bowl, mix water, canola oil, and maple syrup.
  3. Pour syrup mixture over bowl of dry ingredients.
  4. Spoon the combined mixture onto a baking sheet.
  5. Place baking sheet in the oven until the granola is golden.
  6. Add cranberries.
  7. Serve on plate.
