Lemony Smashed Potatoes

Hi Amazing Kids! Happy May. Let’s start spring off with a refreshing potatoe recipe. Hope you enjoy the recipe and the video! Until next month….

Lemony Smashed Potatoes (serves 4)


  • Parsley
  • Potatoes
  • Lemon Juice (or lemons)
  • Nonfat sour cream
  • Chives
  • Olive Oil
  • Cooking Spray
  • Salt and Pepper



  1. Boil your potatoes until they are tender.
  2. Spray a baking sheet with Nonstick Cooking Spray.
  3. Add potatoes onto the baking sheet.
  4. Smash the potatoes
  5. Add the olive oil and lemon juice together.
  6. Drizzle the olive oil/lemon mixture onto the potatoes.
  7. Add salt and pepper to taste.
  8. Put in the oven at 450 degrees for about 25 minutes. (Always have adult supervision when you use any hot appliance like a stove or oven.)
  9. Put potatoes onto a plate.
  10. Mix the chives and sour cream together.
  11. Place a dollop of the chives/sour cream mixture to each potato.
  12. Add some parsley.
