Lemony Smashed Potatoes
Hi Amazing Kids! Happy May. Let’s start spring off with a refreshing potatoe recipe. Hope you enjoy the recipe and the video! Until next month….

Ingredients:
- Parsley
- Potatoes
- Lemon Juice (or lemons)
- Nonfat sour cream
- Chives
- Olive Oil
- Cooking Spray
- Salt and Pepper
Directions:
- Boil your potatoes until they are tender.
- Spray a baking sheet with Nonstick Cooking Spray.
- Add potatoes onto the baking sheet.
- Smash the potatoes
- Add the olive oil and lemon juice together.
- Drizzle the olive oil/lemon mixture onto the potatoes.
- Add salt and pepper to taste.
- Put in the oven at 450 degrees for about 25 minutes. (Always have adult supervision when you use any hot appliance like a stove or oven.)
- Put potatoes onto a plate.
- Mix the chives and sour cream together.
- Place a dollop of the chives/sour cream mixture to each potato.
- Add some parsley.
