Cook Time with Remmi – May 2016

Hi Amazing Kids! I am thrilled to share with you one of my best dishes—Lemony Rice with Raisins! This recipe is not only delicious but also healthy. In fact, raisins are concentrated with vitamins, minerals, and energy. And I’m not the only one enjoying raisins. Did you know that the first baseball team in Fresno, California, was nicknamed the “Raisin Eaters” or that Scott Carpenter became the first person to eat raisins in space in 1962? In ancient Rome, raisins were used as a form of currency. Even President Washington made sure raisins were present at his dinner table. Besides offering health benefits, raisins add flavor: I love rice in a ton of dishes, but in this one, raisins complement the rice with an especially nice sweetness. I hope you enjoy this dish as much as I do!

Lemony Rice with Raisins

Ingredients:

  • Parsley
  • Celery
  • Olive Oil
  • Onion
  • Turmeric
  • Raisins
  • Lemon Juice
  • Chicken Broth
  • Cinnamon
  • Rice
  • Salt
  • Pepper

Directions:

  1. To sauté the onion and celery, pour olive oil in a pan, and add onion and celery.
  2. Add chicken broth, rice, turmeric, cinnamon, lemon juice, parsley, salt, and pepper.
  3. Bring the mixture to a boil.
  4. Stir mixture.
  5. Cover the pot, and bring to a simmer.
  6. Let mixture simmer for 20 minutes.
  7. Add and mix in raisins.
  8. Serve in a bowl.
