Cook Time with Remmi – November 2017

Hi, Amazing Kids! I hope you enjoy one of my favorite breakfast recipes: Fun Eggy Muffins. Breakfast is the most important meal of the day because it helps fuel your mind and body for the rest of the day. As you get into the school routine, be sure to start the morning with a healthy meal so that you have the energy to be your best! I just know you’ll love the flavor of the vegetables in this dish as well as the color and variety. I encourage you to give my muffin recipe a try. Enjoy!

Fun Eggy Muffins

Ingredients:

  • Spinach
  • Onion
  • Tomatoes
  • Cheese
  • Eggs
  • Red Bell Pepper
  • Cooking Spray
  • Milk
  • Celery
  • Salt
  • Pepper
  • Salsa

Directions:

  1. Sauté onions, celery, and red bell pepper until the vegetables are tender.
  2. Add spinach.
  3. Stir ingredients.
  4. Add salt and pepper.
  5. In a separate area, spray a muffin pan with cooking spray.
  6. Place sautéed vegetables in the muffin pan.
  7. In a measuring cup, mix milk, eggs, salt, and pepper. Mix with whisk.
  8. Pour egg mixture into muffin pan on top of the vegetables. Add tomatoes to muffin pan.
  9. Place muffin pan in oven at 350 degrees for 10 minutes.
  10. Serve on plate.
  11. Garnish with salsa and cheese.
