Cook Time with Remmi – October 2017

Hi, Amazing Kids! I’m proud to share one of my favorite dishes—Blueberry and Cucumber Salad. The light, refreshing sauce mixed with colorful fruits and vegetables is a delicious combination. I love this snack because of its natural sweetness, but did you know that the salad also brings great nutritional value? In fact, blueberries are considered to be a superfood: They have a super high concentration of antioxidants and are really healthy for you. I hope you’ll savor this recipe as much as I do! Enjoy!

Blueberry and Cucumber Salad

Ingredients:

  • Cucumber
  • Strawberries
  • Blueberries
  • Onion
  • Parsley
  • Oil
  • Vinegar
  • Salad Dressing
  • Salt
  • Pepper

Directions:

  1. Place blueberries in bowl.
  2. Add cucumber, strawberries, onion, salt, and pepper.
  3. Stir with spoon.
  4. In a separate bowl, create sauce by mixing salad dressing, oil, and vinegar.
  5. Drizzle sauce over fruits and vegetables.
  6. Serve on a plate.
  7. Garnish with parsley.
