Cook Time with Remmi – September 2015

Hi Amazing Kids! Happy Back to School! Let’s hang on to summer a little longer with a great dish I know you’ll enjoy!

Sweet Summer Corn Succotash


  • 1 1/2 T olive oil
  • 1 small onion (diced)
  • 1/2 C red pepper
  • 2 C corn (fresh or frozen)
  • 1 C peas (fresh or frozen)
  • 1 C lima beans (fresh or frozen) SEE NOTE
  • 2 T water
  • 2/3 cup half and half (nonfat)
  • Salt and pepper to taste
  • 1 T basil (chiffonade)
  • 1 T Italian parsley (sliced)


In medium saucepan heat olive oil. Add onion and sauté until tender. Add red pepper and sauté for 1 minute. Add 2 T of water/corn/peas and lima beans and sauté for 1 more minute. Add half and half and simmer 10 minutes until vegetables are tender but firm. Add salt and pepper to taste. Garnish with basil and parsley. NOTE: If using fresh lima beans-blanch beans until crisp tender.
