Hi, Amazing Kids! I hope you enjoy this recipe for Beet Salad with Apples—a delicious idea for an after-school snack. I love combining the subtle flavor of beets with sweet, crunchy apples to create a dish kids devour. And did you know that in addition to their amazing taste, beets are full of vitamins and minerals? In fact, beets contain magnesium; potassium; phosphorous; Vitamins A, B, and C; beta-carotene; and folic acid. Give this snack a try, and it just might become one of your favorites! Enjoy!

Beet Salad with Apples

Ingredients:

  • Parsley
  • Apple
  • Onion
  • Parmesan
  • Beets
  • Romaine
  • White Vinegar
  • Lite Oil
  • Salt
  • Pepper

Directions:

  1. Place washed and trimmed beets on top of tinfoil.
  2. Pour olive oil over beets.
  3. Add salt and pepper.
  4. Wrap beets in tinfoil. Place in oven at 375 degrees for 45 minutes.
  5. Cut up cooked beets.
  6. Place romaine on plate. Use tongs to add the beets to this salad.
  7. Add apples, onions, salt, and pepper to the salad plate.
  8. In a bowl, make dressing by stirring together white vinegar and lite oil.
  9. Pour dressing over salad right before serving.
  10. Garnish with parsley and parmesan.
